Place strawberries in a food processor or blender; puree until smooth.

Whisk strawberry puree, cream, sweetener, water, vanilla extract, lemon juice, vodka, and salt together in a bowl; pour into an ice cream maker.
Step: 3
Process ice cream according to manufacturer’s instructions. Transfer to a freezer-safe container and freeze until firm.
